Cooked Salad Dressing - Gramma Hoover's Recipes

 

Some time back I scanned my Gramma Hoover's recipes from her write-in cook book. I posted them eventually on a photo storage site that I use so that family could access them. I am going to share them with you as well. :-) I have not tried many of these, so just be forewarned that I don't know how some of them will turn out for you. Others have stories or are family favorites and I may mention that when I post them.

Today I'm sharing the first recipe in her book, which happens to be one for cooked salad dressing. The blank recipe book itself was given to her in 1960 according to what she wrote in the front, so these recipes are all at least that old, and most or many are older. As you can see from the picture, this particular recipe came from Better Homes and Gardens, a magazine that has been around for years. 

This recipe came to her from Ginny, and I believe this to be a fellow missionary, Ginny Stier (sp?), who was a good friend of my Gramma's.

I grew up with recipes like these where you were actually expected to know some things from your experiences of cooking. To help out a little bit, I have added a few Editor's Notes in brackets with "EN:" to let you know it's an addition.

Salad Dressing

1/4 C. sugar (or less)

1 tsp. salt

1 tsp. mustard

1/4 tsp. paprika

2 Tblsp. flour

4 egg yolks (or 2 eggs)

1/2 C. vinegar

1/2 C. water 

3 Tblsp. butter or salad oil

Blend sugar, salt, mustard, paprika and flour.

Add egg and beat until smooth and well-mixed.

Add vinegar and water.

Cook over hot water until thick and smooth. [EN: in a double boiler, stirring often.]

Add butter, remove from fire, and chill before using.

If salad oil is added it may be stirred in while hot or cold.

1 C. sweet or sour cream, plain or whipped may be added.

There is so much sorrow and misery and tragedy in the world lately, what with news sources and people posting things on social media one can quickly be overwhelmed by it all. While I strongly encourage prayer for various situations, and especially for the true Christians in places such as Ukraine, West Africa and Iraq, in all honesty, I don’t believe that the Lord would want us to dwell on these things. I have two reasons for saying this.

One is obvious: Philippians 4:6-9  Be careful for nothing; but in every thing by prayer and supplication with thanksgiving let your requests be made known unto God. And the peace of God, which passeth all understanding, shall keep your hearts and minds through Christ Jesus. Finally, brethren, whatsoever things are true, whatsoever things are honest, whatsoever things are just, whatsoever things are pure, whatsoever things are lovely, whatsoever things are of good report; if there be any virtue, and if there be any praise, think on these things.  Those things, which ye have both learned, and received, and heard, and seen in me, do: and the God of peace shall be with you.

The other reason is because throughout Jesus’ earthly ministry we find Him only rarely talking about “current events.” Obviously He cared about people, but He seemed to focus primarily on those who were in front of Him at the moment. “God so loved the world”, but Jesus didn’t come the first time to set all wrongs right, and He didn’t even try. He came to seek and to save that which was lost (Luke 19:10), and He did that with all His might, so to speak. In essence we were commanded to continue that commission until He comes to finally set this world straight Himself. 

This doesn’t mean we shouldn’t be moved with compassion and pray for those in tribulation. We should. But it is not our focus nor our job to fix the whole world or save it from itself. Spreading gruesome photos all over the internet and even supporting organizations of doubtful reputation thinking that we’re helping doesn’t seem like a useful fulfillment of “the great commission”, as it’s called, nor of ministering to the saints. (Besides, I can’t help wondering if spreading the horrible photos doesn’t inspire some evil people to even greater wickedness, rather than inhibiting them.  In some instances it seems more like aiding their evil cause than stopping it. It’s something to think about anyway.)

This poem by Annie Johnson Flint has been a real blessing to me on a number of occasions. It is such a timely and helpful reminder of where our thoughts should be focused in the midst of both our personal struggles and the turmoil of this present wicked world. It also tends to remind me that things haven’t gotten worse as much as we might imagine sometimes. She wrote this sometime in the late 1800s, but her description of the world was just as appropriate then as now.

When I Think of Thee

This is a wonderful reminder of the blessedness that we can enjoy when we focus our thoughts in the right place. May God help us to do this.

Having dealt with chronic health conditions for much or all of my life, this is a subject that is close to my heart. I have been, perhaps, slow in making it a separate subject here on The Home Maker's Corner, but in some respects this may have been a good thing since experience tends to lend better understanding. At this point in time (2022) we are beginning to feel the lasting effects of Covid-19. Some people are struggling to regain their previous health and there is no timeline to tell us how long it will take, so this section of the HMC may be more needful than it even was before.

If you are dealing with chronic illness or health conditions yourself, or if you have a loved one who is, I hope that you will find something here that will encourage, edify, instruct or otherwise bless you. I have already written a series of articles and I hope to prepare them to be published here over the next months.

Guest Post - No Doctrines Are Changed?

I often hear those who criticize the King James Bible and defend the multiple modern versions say: "Well, no doctrines are changed in the different versions." But is this true?

There are presently well over 100 different English bible versions available to the general public and none of them agrees with the others in both text and meaning in hundreds of verses. This is easily proved and well noted by many atheist, Muslim and Bible basher sites on the internet.

Which of these different bibles is really the inspired, inerrant words of God? Or have the complete, pure, inerrant words of God been lost in the shuffle and God has failed to preserve His words as He promised? Is it true that "no doctrines are changed" in the various conflicting versions?

Some Christians say, "Well, only the originals were inspired." Since we don't have any of the originals and nobody knows what they really said, how can we then say the Bible is the inspired word of God? Shouldn't we say the bible WAS the inspired word of God?

I and thousands of other Christians believe God has kept His promises to preserve His words and He has done so in the King James Holy Bible. In general terms the overall state of textual evidence and ancient versions is overwhelmingly on the side of the King James Bible readings as opposed to such versions as the NASB, NIV, RSV, ESV, and ISV.
