A Recipe for Hummus from the Deeply Snowy North Country

Here's a recipe for hummus from Jennifer at My Cubby Crafts, along with a little about their very snowy winter life where she lives. :-) I like the idea of hummus without tahini since I'm not a big fan of tahini myself, although I like sesame seed otherwise. Hummus is one of my favorite foods. I would eat it every day if my body would tolerate it. I hope you can enjoy trying this recipe out. Eat a little for me too. ;-)

Garlic Spread

In rummaging through some recipes in my pile I ran across this recipe from a friend for Garlic Spread.  Garlic Day was the 19th of this month so it seemed appropriate to share it here.
Garlic Spread
8 oz. goat cheese (feta)
2 tsp. extra virgin olive oil
2 large garlic cloves

Process all in a blender or food processor till smooth.
Serve with pita bread, chips, or garlic toast bites.

You may wish to add some fresh or dried herbs to this as well.  Basil or oregano would make a nice addition.  If you use dried herbs you may want to allow it to stand for 10 – 15 minutes before serving.

Guacamole


Here is our recipe for guacamole - to go with the Taco Soup recipe, or for any time you want to make guacamole. We used to make a different style of guacamole, but after a friend expressed how he like the taste and/or texture of the store bought variety better, I came up with this alternative. Interestingly, though the mayonnaise is non-traditional, we like it better this way.

Guacamole

3 - 4 ripe avocados (med-small, non-sweet variety)
1/4 - 1/2 C. sour cream
1 - 2 Tbl. mayonnaise
Garlic powder - to taste
Onion powder - to taste
Red chili pepper (powder)
1/4 tsp. cumin
Pinch of oregano
1 - 2 tsp. lemon juice – preferably fresh
Salt to taste
Mix all ingredients in a small - med. bowl. If avocado does not mash enough just from mixing you may wish to smash the chunks against the side of the bowl in order to make a smoother texture.
Serve with chopped black olives and tomatoes, and grated cheese. You may mix these in or use them to garnish the top. A dollop of sour cream and a black olive on top also looks nice when serving it.

Mary's Fake Caramel Dip

I invented some dip tonight after looking online for a recipe for caramel dip for apples and realizing that I didn't have time or the ingredients to make "the real thing".  It turned out really well, if I do say so myself.  My husband, Peter, and I had eaten a fairly large dinner in the middle of the afternoon so we weren't very hungry tonight.  I thought a nice plate of apple and cheese slices, some crackers and pretzels and some caramel dip would be just about right.  It was.

Here's the recipe for the dip.

Quick "Caramel" Fruit Dip

2/3 C. sour cream
2 Tbs. packed brown sugar
Slightly more than 1/2 tsp. of vanilla
1/2 tsp. of lemon juice

Mix all ingredients till brown sugar is dissolved.  Add more sweetening (artificial, sugar, stevia, etc.) if it isn't sweet enough for you.

Makes 2-3 servings
